Prawn Noodle Soup

The Soup Tastes so thick and Sweet!!



Below recipe Adapted from newspaper cutting (contributed by my hubby's friend, THANKS!)






Recipes are making for 2 pax but i can use this recipe to make for 4 pax

Changes in Ingredients:

  • 500g Spare Ribs
  • 20 medium prawns + 8 XL Large Tiger Prawns
  • 1 litre of water (500ml plain water and 500ml from the water used to cook prawns)
  • 80g Anchovies
  • 4 tbsp brown sugar
  • 5 cloves Garlic
  • 2 Star Anise
  • 10 black peppercones
  • 2 tbsp Dark Soya Sauce
  • Omit Chillies
Changes in Method:



Step 2: Devien prawns and cook them in boiling water.
        Drain and Set aside.

Amy's Step:Marinate Prawns with salt, pepper and 1tsp of sesame oil
           Keep water used to cook prawns to cook the stock

Step 8: Add water, peppercorns, cloves, star anise. Lower heat and Simmer
       

Amy's Step:I noticed that the recipe did not mention when to add the spare ribs. I added spare ribs during simmering, to add sweetness of the soup.
